西点面包:Oliebollen: Dutch donuts荷兰甜甜圈(荷兰油糖饼) 

按照名字直译过来就是油球。英语中常叫做Dutch Doughnuts。在一球发酵好的面团上点缀上些葡萄干或其他调味蜜饯,然后放入热油锅里炸。食用时再在外撒上一层白色的糖粉。油球是荷兰人民迎新年时的应节食物。除夕夜没它怎么行。但转念一想,荷兰人真的不太擅长烹调和享受美食吧~辞旧迎新这么重要的节日,他们欢度的方式除了看看烟火,也就是吃这么个油炸面团。真是一年到头都贯彻着“简单、随性”的作风呢~

Ingredients材料

A lemon
An apple – preferably a sour one
500 g of flour
75 g of raisins
500 ml of milk
One small packet of yeast
1 teaspoon of sugar
1 teaspoon of salt
1 teaspoon of ground cinnamon
Crushed nuts and other dried fruits (optional)

Method制作方法

1. Zest the lemon into a bowl and then squeeze out all of the juice. Peel and core the apple before chopping it into very small pieces. Combine the lemon zest, juice and apple and mix well
2. Wash the raisins and leave them to dry. In a saucepan, heat the milk gently – you definitely don’t want it to boil and ideally are looking for a lukewarm temperature (no more than 40°C).
3. In a separate bowl, add the sachet of yeast to 100 ml of the warmed milk and a teaspoon of sugar. Combine until the mixture is smooth and consistent.
4. In another, large bowl, mix the flour and salt. Using your hands, make a hole in the center and pour the yeast mixture into it. Add the remaining milk to the hole you’ve made. Using a hand blender or a whisk, whisk everything together until you have a smooth batter.
5. Now add the apple and lemon mixture, plus the raisins, cinnamon and – if you want to – any optional extras you fancy trying (nuts, chocolate, and so on).
6. Cover the bowl with cling film and leave to rest in a warm place for an hour – this is when your batter will rise.
7. Heat your oil to 180oC. Stick a large, metal soup spoon into the oil for a second or two – be careful at this point. Now take a spoonful of batter and gently dip it into the oil, tipping it off the spoon. Repeat the process but be careful not to fry too many oliebollen at the same time.
8. Each oliebollen will take 8-10 minutes to fry. Use a fork to turn them over halfway through, so they color evenly. You’ll know when they’re done – they’ll be a rich golden brown.
9. Take out fried oliebollen and transfer to a kitchen towel, to soak up excess oil.
10. Serve with a liberal sprinkling of powdered sugar or another sweet topping!
