主料:300g鸭血一盒、牛百叶400克、250g的午餐方火腿一个、黄豆芽300克;
调料:色拉油适、食盐、黄酒、葱、姜、香菜、花椒、小红干辣椒、豆瓣酱等适量,火锅调料半盒、浓汤宝一小盒;

毛血旺的做法:
1.鸭血和午餐方火腿切成约5CM厚的大片。百叶洗净,切成梳子形的丝;

2.黄豆芽摘根洗净,干辣椒用剪小段倒出籽,葱分别切成葱花和葱段,姜切片,香菜切碎待用;

3.锅中放入适量水,放入葱段和姜片烧沸;烧沸后分别放入鸭血片和百叶丝汆煮约1分钟左右分钟,捞出备用;

4.炒锅中油烧五成热时放入葱花爆香,随后放入黄豆芽和盐炒至豆芽熟透,盛出,平铺放入容器里打底;

5.锅里放少许油,将郫县豆瓣酱及川崎火锅调料放入锅中大火翻炒油变红后,调入黄酒、水、浓汤宝;

6.烧沸后,依次放入午餐火腿片,鸭血片,煮4分钟后放入百叶丝,再煮约1分钟后关火,连汤带水倒入容器里;

7.炒锅里倒入3汤匙的油,微热时将干辣椒小段和花椒放入,转小火慢慢炸出香味后关火,淋在做好的血旺上面,撒上香菜碎即可;
